  • ½ cup Wilton pink candy melts
  • ½ cup Wilton bright pink candy melts

Instructions

  1. Heat Treat Cake Mix: Preheat your oven to 350°F. Spread the strawberry cake mix evenly on a parchment-lined baking sheet and bake for 5 minutes to eliminate any bacteria. Remove and let it cool completely on a wire rack.
  2. Prepare Cake Dough: In a medium bowl, beat the softened cream cheese with a hand mixer on medium-high speed until creamy and smooth. Fold in the cooled cake mix using a rubber spatula, then mix again with the hand mixer until dough forms a smooth, combined consistency.
  3. Add Cream Cheese Chips: Gently fold the chopped cream cheese chips into the cake and cream cheese dough mixture until evenly distributed.
  4. Chill Dough: Cover the dough with plastic wrap and refrigerate for 2 hours to firm up.
  5. Form Truffles: After chilling, line two baking sheets with parchment paper. Using a 1 ½ tablespoon cookie scoop, portion the dough and roll each into smooth balls by hand. Place the balls on the sheets and let them rest for 15 minutes to expand and reduce cracking during coating.
  6. Melt Vanilla Wafers: Set up a double boiler on low heat or use a microwave-safe bowl to melt the vanilla melting wafers slowly, stirring frequently to maintain even temperature and smoothness.
  7. Coat Cake Balls: Using a fork, dip each dough ball fully into the melted vanilla wafers. Tap gently to remove excess coating, then place onto parchment-lined baking sheets spaced 2 inches apart. Before the coating sets, optionally sprinkle on sprinkles for decoration on half of the truffles.
  8. Melt Pink Candy Melts: Place the pink and bright pink candy melts separately into microwave-safe piping bags and microwave on low until melted. Cut a small tip from each bag and drizzle the candy melts over the coated truffles not topped with sprinkles.
