  4. Shape Cookies: Using a 1½ tablespoon scoop, portion out the dough, then roll each portion into a smooth ball. Roll each dough ball in the sanding sugar or non-pareils until fully coated.
  5. Chill if Needed: If the dough feels too sticky to handle, place it in the refrigerator for 30 to 60 minutes to firm up for easier shaping.
  6. Arrange on Baking Sheet: Place the coated cookie dough balls on the prepared baking sheet, spacing them about 1½ inches apart to allow for spreading during baking.
