A sprinkle of sesame seeds and fresh green onions complete each serving for that irresistible takeout-style finish.

Ingredients

Scale

For the Chicken and Marinade

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste

For Cooking

  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon ginger, minced

Vegetables

  • 1 bell pepper, sliced
  • 1 cup broccoli florets

For Garnish

  • Sesame seeds
  • Green onions, sliced

Instructions

  1. Marinate Chicken: In a bowl, mix sweet chili sauce, soy sauce, and cornstarch to form a smooth marinade. Add the chicken pieces, season with a little salt and pepper, and toss until each piece is well coated. Cover and let the chicken marinate for 15 minutes to absorb the flavors.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer and cook, stirring occasionally, until browned and cooked through, about 7-10 minutes. Once done, transfer the chicken to a plate and set aside.
  3. Sauté Vegetables: In the same skillet, add the minced garlic, ginger, sliced bell pepper, and broccoli florets. Sauté for 5-7 minutes until the vegetables become tender but still slightly crisp, stirring frequently to prevent burning.
  4. Combine: Return the cooked chicken to the skillet with the vegetables. Pour in any remaining marinade, and cook everything together for an additional 2-3 minutes until the sauce thickens and the chicken is thoroughly heated.
  5. Serve: Remove the skillet from heat. Garnish the Sweet Chili Chicken with sesame seeds and sliced green onions. Serve immediately, with steamed rice or noodles if desired.

Notes

  • For extra heat, add a pinch of red chili flakes to the marinade.
  • Substitute boneless chicken thighs for more juicy results.
  • Feel free to swap in other veggies like snap peas, carrots, or zucchini.
  • This recipe works well with tofu for a vegetarian option (substitute soy sauce with tamari for gluten free).
  • Leftovers will keep in the fridge, tightly covered, for up to 3 days.
