Chicken Fritters:
- 1 1/2 lbs (about 3 large) chicken breasts, diced into 1/3” to 1/2″ pieces
- 2 large eggs
- 5 tablespoons mayonnaise (about 1/3 cup)
- 1/3 cup all-purpose flour (or cornstarch or potato starch)
- 4 oz (about 1 1/3 cups) shredded mozzarella cheese
- 1 1/2 tablespoons fresh dill, chopped
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper, or to taste
- Extra light olive oil or any high-heat oil for sautéing
- Dice the Chicken: Dice the chicken breasts into small pieces, about 1/3″ to 1/2″ thick, and set aside.
- Make the Batter: In a medium bowl, combine the eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Mix well until smooth.
