Chicken Fritters:

  • 1 1/2 lbs (about 3 large) chicken breasts, diced into 1/3” to 1/2″ pieces
  • 2 large eggs
  • 5 tablespoons mayonnaise (about 1/3 cup)
  • 1/3 cup all-purpose flour (or cornstarch or potato starch)
  • 4 oz (about 1 1/3 cups) shredded mozzarella cheese
  • 1 1/2 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper, or to taste
  • Extra light olive oil or any high-heat oil for sautéing

Instructions

  1. Dice the Chicken: Dice the chicken breasts into small pieces, about 1/3″ to 1/2″ thick, and set aside.
  2. Make the Batter: In a medium bowl, combine the eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Mix well until smooth.
  3. Coat the Chicken: Fold in the diced chicken, ensuring all pieces are coated. Refrigerate for at least 2 hours.
  4. Cook the Fritters: Heat oil in a skillet, drop spoonfuls of the mixture, flatten slightly, and cook until golden on both sides.
  5. Drain and Serve: Transfer cooked fritters to a paper towel-lined plate to drain excess oil before serving.
