For the Thai Basil Chicken:

  • 1 lb boneless, skinless chicken thighs, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 1 red chili, sliced (adjust to taste)
  • 1 bell pepper, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and shallots, and sauté until fragrant, about 1 minute.
  2. Add sliced chicken thighs to the pan and cook until browned on all sides, about 5-7 minutes.
  3. Stir in the sliced red chili and bell pepper, and cook for another 2-3 minutes.
  4. In a small bowl, mix oyster sauce, soy sauce, fish sauce, sugar, and chicken broth. Pour this sauce over the chicken and vegetables in the pan.
  5. Stir well to combine and let it simmer for 2-3 minutes.
  6. Add fresh basil leaves to the pan and gently toss until the leaves are wilted.
  7. Taste and adjust seasoning with salt and pepper if needed.
  8. Remove from heat and serve hot over steamed jasmine rice.
