Ingredients

Scale

For the Salad:

  • 1 (15 ounce) can of chickpeas, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • ¼ cup diced red onion
  • 15 grape tomatoes, halved (about 1 cup)
  • ⅓ cup pitted kalamata olives, chopped (optional)
  • 1 medium cucumber, sliced and quartered
  • 4 ounces feta cheese, crumbled or cut into ½ inch cubes

For the Dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Freshly ground salt and pepper, to taste

Instructions

  1. In a large bowl, combine all the salad ingredients and toss well to mix. Make sure everything is evenly distributed.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, and a pinch of salt and pepper. Mix until well combined.
  3. Pour the dressing over the salad and toss again to coat all ingredients evenly. Ensure all ingredients are coated with the dressing.
  4. Taste and adjust the seasoning with more salt and pepper if needed. Season according to your taste preferences.
  5. Let the salad marinate in the refrigerator for at least 1 hour to enhance the flavors, or serve immediately. Marinating will allow the flavors to meld together.
  6. Best enjoyed within 2-3 days for optimal freshness. Store leftovers in an airtight container in the fridge.
