Ingredients

Scale

Madeleine Batter

  • 1 cup Unsalted Butter (substitute with coconut oil for dairy-free)
  • 3 large Eggs (use egg replacers for vegan option)
  • 3/4 cup Castor Sugar (granulated sugar works as an alternative)
  • 2 tablespoons Instant Coffee (substitute with espresso powder for bolder flavor)
  • 1/4 cup Hot Water
  • 1 cup Cake Flour (all-purpose flour can be used)
  • 1 tablespoon Cocoa Powder (Dutch-processed cocoa yields milder taste)
  • 1 teaspoon Baking Powder (ensure it’s fresh for best results)
  • 1/4 teaspoon Salt (omit only on sodium-restricted diet)
  • 1 cup Unsalted Butter (melted)

Mascarpone Filling

  • 1 cup Mascarpone Cheese (can be substituted with cream cheese)
  • 1/4 cup Confectioners’ Sugar (granulated sugar for grainier texture)
  • 1/2 cup Heavy Whipping Cream (substitute with coconut cream for dairy-free)
  • 2 tablespoons Kahlua Coffee Liqueur (omit for non-alcoholic option)
  • 1 tablespoon Cocoa Powder (for dusting) (swap with powdered sugar for sweetness)

Instructions

  1. Prepare Coffee Mixture: In a small bowl, dissolve the instant coffee in hot water by stirring thoroughly until fully blended. Set aside to cool slightly.
  2. Mix Eggs and Sugar: In a mixing bowl, whisk together the eggs and castor sugar until the mixture is smooth and creamy. Incorporate the cooled coffee mixture into this blend.
  3. Sift Dry Ingredients: Sift together cake flour, cocoa powder, baking powder, and salt into the wet ingredients, mixing gently until there are no lumps and the batter is smooth.
  4. Add Butter: Pour the melted unsalted butter into the batter and whisk until fully combined and smooth.
  5. Chill the Batter: Cover the mixing bowl with plastic wrap and refrigerate for at least 1 hour to allow the batter to firm up, ensuring tender madeleines.
  6. Preheat Oven and Prepare Pan: Set the oven temperature to 370°F (190°C) and lightly grease the madeleine pan to prevent sticking.
  7. Fill Madeleine Molds: Using a piping bag or spoon, fill each madeleine mold about 80-90% full with the chilled batter for perfect shape and rise.
  8. Bake: Bake the molds for 10-12 minutes, or until the edges turn golden and the centers spring back gently when pressed.
  9. Cool: Remove the madeleines from the oven and transfer them to a wire rack to cool completely before further preparation.
  10. Prepare Mascarpone Filling: In a bowl, beat together mascarpone cheese, sifted confectioners’ sugar, and heavy whipping cream until smooth and creamy. Fold in the Kahlua for flavor and chill the filling until ready to use.
  11. Fill Madeleines: Using a small knife, create a hole or cavity in each cooled madeleine. Pipe the mascarpone filling into each hole carefully.
  12. Finish and Serve: Dust the filled madeleines with cocoa powder for an authentic tiramisu touch. Serve immediately or chill briefly before serving.

Notes

  • For a dairy-free version, substitute unsalted butter with coconut oil, mascarpone cheese with a vegan cream cheese alternative, and heavy whipping cream with coconut cream.
  • For a vegan option, use egg replacers in place of eggs.
  • Instant coffee can be substituted with espresso powder for a bolder coffee flavor.
  • Omit Kahlua for a non-alcoholic version of this dessert.
  • Ensure baking powder is fresh for optimal rise and texture.
  • Madeleine pans should be well-greased or non-stick to easily remove the delicate cakes.
  • Chilling the batter is key to achieve the classic madeleine hump and texture.
