Instructions

  1. Preheat the Oven: Set your oven to 400 degrees Fahrenheit to ensure it’s hot and ready for roasting the potatoes.
  2. Prepare Baking Sheets: Line one or two baking sheets with aluminum foil and spray with non-stick spray such as Pam to prevent sticking. Set aside.
  3. Simmer the Potatoes: Fill a large pot with 1-2 quarts of water, add 1 teaspoon of salt, and bring to a boil. Reduce the heat to maintain a simmer.
  4. Slice and Parboil Potatoes: Peel the potatoes and slice them into approximately 1/2 inch thick rounds. Place these slices into the simmering water and cook for 3-4 minutes until just slightly tender but still firm. Drain and rinse under cold water to cool.
  5. Cut Potato Hearts: Using a small heart-shaped metal cookie cutter, cut out as many heart-shaped pieces from the potato slices as possible. Save the scraps in water to make mashed potatoes if desired.
  6. Mix Seasoning: In a bowl, combine olive oil, salt, pepper, garlic powder, rosemary, and paprika. Stir well to create the seasoning mixture.
  7. Coat the Potato Hearts: Pour the seasoning mixture over the potato hearts, stir gently, and let them marinate for about 5 minutes to absorb the flavors.
  8. Roast in Oven: Arrange the potato hearts on the prepared baking sheets in a single layer. Roast for 22-25 minutes, flipping the hearts over halfway through the cooking time to ensure even browning.
  9. Optional Broil for Crispness: If desired, broil the potatoes for an additional 5 minutes to achieve a golden brown and crispy exterior. Watch carefully to prevent burning.
