Instructions

  1. Activate the Yeast: In a small bowl, mix the active dry yeast, warm water, and sugar. Let it sit for 5–10 minutes until it becomes foamy, indicating the yeast is active.
  2. Prepare the Dough: In a large bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil to the flour. Knead the mixture into a smooth dough for about 8–10 minutes. Once smooth, cover the dough and let it rise for 1 hour, or until doubled in size.
  3. Caramelize the Onions: While the dough rises, heat olive oil over medium-low heat in a pan. Add the thinly sliced onions and cook slowly, stirring occasionally, for 15–20 minutes until they turn golden brown and caramelized.
  4. Prepare the Filling: Add minced garlic, fresh spinach, dried oregano, and optional red pepper flakes to the caramelized onions. Cook for an additional 2–3 minutes or until the spinach wilts. Season with salt and pepper to taste and then let this mixture cool.
  5. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a baking dish to prevent sticking.
  6. Roll Out Dough and Assemble: On a floured surface, roll out the risen dough into a large rectangle. Spread the marinara sauce evenly over the dough, then evenly distribute the cooled spinach and onion filling on top.
  7. Form the Rolls: Starting from the long edge, roll the dough tightly into a log shape. Slice the log into 10–12 individual rolls. Arrange them cut-side up in the prepared baking dish.
  8. Add Topping and Bake: Sprinkle the rolls with nutritional yeast if using, which adds a cheesy flavor. Bake in the preheated oven for 25–30 minutes, or until the rolls are puffed and golden brown.
