Salad
- 3 cups cooked shredded chicken (from rotisserie chicken or poached chicken breasts)
- 6 cups shredded Napa cabbage or wombok
- 1 cup shredded carrots
- 1/2 red onion, very thinly sliced
- 1 cup fresh mint leaves, roughly chopped
- 1 cup fresh cilantro leaves, roughly chopped
- 1/2 cup roasted unsalted peanuts, chopped
Dressing
- 1/4 cup fresh lime juice
- 2 tbsp fish sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or sugar
- 1 clove garlic, finely minced
- 1 red chili, deseeded and finely minced (optional)
- Combine Salad Ingredients: In a large bowl, add the shredded chicken, shredded Napa cabbage, shredded carrots, thinly sliced red onion, chopped mint, and chopped cilantro. Toss all ingredients well to mix evenly.
