Watermelon Salad:

  • one small Watermelon (about 500g), chopped into chunks and drained
  • 100g Feta cheese (or crumbled marinated tofu)
  • a drizzle of Extra virgin olive oil
  • a drizzle of Lemon juice
  • a few Mint leaves
  • Lemon zest (to taste)
  • Black pepper

Optional Additions:

  • Olives
  • Basil
  • Other herbs
  • Capers (use sparingly due to saltiness)
  • Lime juice

Instructions

  1. Chop the Watermelon: Cut the watermelon into chunks and place them in a colander to drain, if desired.
  2. Add Feta Cheese: Sprinkle the feta cheese or tofu feta over the watermelon.
  3. Season and Mix: Drizzle with olive oil, lemon juice, add mint leaves, black pepper, lemon zest, and mix well.
  4. Enjoy: Serve immediately or refrigerate for 30 minutes before serving. The feta cheese may draw out some juices from the watermelon.
