Watermelon Salad:
- one small Watermelon (about 500g), chopped into chunks and drained
- 100g Feta cheese (or crumbled marinated tofu)
- a drizzle of Extra virgin olive oil
- a drizzle of Lemon juice
- a few Mint leaves
- Lemon zest (to taste)
- Black pepper

- Olives
- Basil
- Other herbs
- Capers (use sparingly due to saltiness)
- Lime juice
