Dough:

  • 1 cup whole milk, warmed to 110-115 degrees F
  • 2 ¼ teaspoons active dry yeast (equivalent to a 0.25 ounce package)
  • 2 tablespoons granulated sugar, plus 1 teaspoon
  • 2 large eggs, lightly beaten
  • ¼ cup unsalted butter, melted and cooled
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • 3 ½ to 4 cups bread flour (plus more as needed, see note below)

Garlic Herb Butter:

  • ¾ tablespoon fresh chopped rosemary
  • 2 tablespoons fresh parsley, finely chopped (fully patted dry)
  • 1 teaspoon dried oregano
  • 6 tablespoons unsalted butter, melted
  • ½ tablespoon Italian seasoning
  • 3 cloves garlic, minced

Instructions

  1. Activate the yeast: Pour warm milk into the bowl of a stand mixer. Stir in 1 teaspoon sugar and yeast. Let sit until frothy.
  2. Make the dough: Beat in remaining sugar, eggs, melted butter, garlic powder, and salt. Add flour gradually until dough forms. Add herbs.
  3. Knead and rise: Knead the dough until smooth. Let it rise until doubled in size.
  4. Shape and rise again: Divide dough, shape into balls, and let rise in a baking pan.
  5. Bake: Preheat oven. Brush with garlic herb butter and bake until golden. Brush with more butter before serving.
