Ingredients

Scale

Protein

  • 1 lb boneless skinless chicken breasts, diced

Seasonings & Oil

  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Vegetables

  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (optional)

Pasta & Liquids

  • 1 ½ cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream

Dairy

  • 1 cup grated Parmesan cheese

Garnish

  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the chicken: In a large pot, heat olive oil over medium heat. Add diced chicken and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Once cooked, remove the chicken from the pot and set it aside.
  2. Sauté the aromatics: Using the same pot, add the diced onions and minced garlic. Cook until softened and fragrant, approximately 2-3 minutes.
  3. Add bell pepper: If using bell pepper, stir it into the pot and cook for an additional 2 minutes until slightly softened.
  4. Add orzo and liquids: Stir in the orzo pasta, followed by the chicken broth and heavy cream. Bring the mixture to a boil.
  5. Simmer the orzo: Reduce the heat to low and let the mixture simmer for 10-12 minutes, stirring occasionally, until the orzo becomes tender and most of the liquid is absorbed.
  6. Finish the dish: Stir the cooked chicken back into the pot along with the grated Parmesan cheese. Mix well until the cheese melts and creates a creamy sauce. Adjust seasoning with salt and pepper as needed.
  7. Serve: Serve the Cajun Chicken Alfredo Orzo warm, garnished with fresh parsley if desired.

Notes

  • For extra heat, add more Cajun seasoning or a pinch of cayenne pepper.
  • You can substitute chicken thighs for breasts for a juicier texture.
  • Use low-sodium chicken broth for better control over salt content.
  • If you prefer a lighter sauce, substitute heavy cream with half-and-half.
  • The dish can be made vegetarian by replacing chicken with mushrooms or tofu and using vegetable broth.
